On November 16th, La Parolina, a Michelin-starred restaurant in Trevinano, hosted an extraordinary event: a tasting lunch that delighted guests with a selection of dishes and pairings carefully designed to highlight the best of autumn flavors. Terre dei Cavalieri had the honor of participating with two of its wine excellences: the wines from Castello di Magione and Villa Giustiniani.

A Menu Designed to Amaze
The event began with a refined aperitif featuring hummus and extra virgin olive oil cream, accompanied by a parmesan “lollipop.” To enhance these flavors, Villa Giustiniani’s Prosecco Brut was served—a fresh and elegant wine that perfectly set the tone.

Among the most appreciated courses was the crispy oyster on a bed of braised lettuce cream and lippia gel, paired once again with Villa Giustiniani’s Prosecco Brut, delivering an explosion of flavors. The meal continued with Castello di Magione’s Grechetto 2023, served with black lentil caviar, offering a harmonious and surprising combination.

Castello di Magione’s Belfiore 2023 was paired with garlic risotto and charred onion, highlighting the dish’s creaminess and character, while Fumanelli’s Sidus 2017 accompanied gnocchi with porcini mushrooms, octopus, and thyme, delivering a symphony of autumn flavors.

The grand finale featured Squarano 2018 and Amarone 2019 from Fumanelli, perfectly complementing the chicken-stuffed maritozzo with legume pudding and the braised capel del prete with spiced sauce and tomato powder, offering a unique experience of balance and refinement.
